Delicious, Two-Ingredient Coconut-Apricot Balls

Two ingredients in equal quantities, blended together and rounded into balls—it does not get easier! Enjoy.

In my effort to spend the least amount of time in the kitchen, I make very quick meals. Over the years, I have taught myself various cooking tips, shortcuts and hacks, which don’t compromise on taste and nutrition, but make cooking dishes faster. Prep time: 10 mins

Total time: 10 mins

Yield: 15 balls

Ingredients:

  • 1 cup dried apricots
  • 1 cup desiccated coconut + extra for rolling

How to make:

  1. Place apricots and coconut in a food processor.
  2. Blend until the mixture comes together and is well combined (depending on your processor, this might take some time).
  3. Roll into bite-sized balls.
  4. Roll balls in extra coconut and enjoy.

You may store them in the fridge for upto 2 weeks.
